These potato balls are as colourful as spring. Refreshing like the spring wind because of the peppermint.

Ingredients

  • 500g soft boiled potatoes from the day before / weichgekochte Kartoffeln vom Vortag
  • 2 red peppers/rote Peperoni
  • 3 spring onions / Frühlingszwiebeln
  • 1 handful of fresh peppermint leaves / Pfefferminzblätter
  • 3 eggs/ Eier
  • Sea Salt and Pepper/ Meersalz und Pfeffer

Instructions

  1. Mash the potatoes by hand and mix with the very finely chopped chillies and spring onions and add the eggs.
  2. Season.
  3. Form balls from the mixture by hand.
  4. Place them on a baking tray and bake at 220 degrees C for 25-30 minutes.
  5. If you like, you can sprinkle them with a little olive oil while they are baking.
    1. Die Kartoffeln von Hand zermatschen und mit den sehr fein geschnittenen Peperoni und Frühlingszwiebeln und den Eiern vermischen und würzen.
    2. Von Hand nun Kugeln formen.
    3. Diese auf ein Blech setzen und bei 220 Grad Umluft während 25 – 30 Minuten backen. Wer möchte kann sie während dem Backen mit ein wenig Olivenöl besprenkeln.
