A classic from the south of France – one of the best ways to make use of the typical summer vegetables.
Ingredients
- 1 onion
- 1 clove of garlic
- 500g tomatoes
- 600g courgettes
- 600g aubergines
- one red, green and yellow pepper each
Instructions
- Cut the tomatoes, courgettes and the aubergines into cubes. Cut the peppers into stripes.
- Heat olive oil in a frying pan. Sauté the chopped onion firstly and then add the pressed garlic
- Add tomatoes, courgettes, aubergines and peppers and fry for about 5 minutes
- season with ground pepper, 2 tespoons of salt and Provençal herbs and leave to simmer covered for at least 30 minutes or longer
