Tarte aux Pommes

Yesterday I saw an episode of my beloved series “Chefs Table” and saw how apple tartes are baked in Normandy. I was missing the butter and the apples from Normandy, but with a lot of imagination my tarte could also be from there. The bite of the dough is just as delicious as the caramelized apples. The recipe is so simple, but delicious.

Ingredients

  • 400g Flour
  • 50g Cane Sugar
  • A pinch Salt
  • 250g Butter
  • 2 Tablespoons Greek Natural Yoghurt
  • 3 Apples
  • 10g Cinnamon
  • 20g Cane Sugar
  • 30g Butter flakes

Instructions

  1. Shortcrust Pastry: Knead the Flour, the Cane Sugar, a Pinch of Salt, the Butter and the Yoghurt by hand to a smooth Dough.
  2. Grease a 28cm round baking Tray with Butter and cover with the rolled out Dough.
  3. Peel the Apples and cut into 2mm thick Slices together with the Casing. Either leave the Seeds in it or remove them.
  4. Sprinkle generously with Cinnamon, Cane Sugar and Butter flakes
  5. Bake in the Oven at 220°C circulating Air for 35 Minutes.
