Ingredients

  • 800g beef stew (1 cm or 3cm cubes, see 4 below) / Rindsgeschnetzeltes (1cm Würfel) oder - voressen (3 cm Würfel, siehe 4 nachstehend)
  • 1 onion / Zwiebel
  • 1 clove of garlic / Knoblauchzehe
  • 2 dl stock / Bouillon
  • 1 dl red wine / Rotwein
  • 1 dl cream / Rahm
  • 1 teaspoon tomato purée / 1 TL Tomatenpurée
  • 2 tablespoon flour / 2 EL Mehl
  • Olive oil, salt Pepper / Olivenöl, Salz, Pfeffer

Instructions

1. dry the beef stew with kitchen paper, dust with 2 tespoons salt and 2 tablespoons flour and mix well. Chop the onion, press the garlic and make 2 dl stock.
2. fry the meat in some olive oil in a roasting pan (that has a lid) for about 3 to 5 minutes on all sides and then put to the side.
3. Fry the onions in the same roasting pan. Add the garlic and fry briefly. Add the tomato purée and sauté briefly.
4. add the stock and red wine and bring to the boil. Add the meat, cover and leave to braise in the oven at 180°C for about 30 minutes (1 cm cubes) or 1 hour 30 minutes (3 cm cubes).
5. put the pan on the cookin field, add the cream, bring to the boil and simmer without the lid for about 15 minutes over a high heat.
Serve with mashed potatoes or pasta and vegetables.

1. Rindsgeschnetzeltes mit Küchenpapier abtrocknen, mit 2 TL Salz und 2 EL Mehl bestäuben und gut vermischen. Zwiebel hacken, Knoblauch pressen und 2 dl Bouillon herstellen.
2. Fleisch in etwas Olivenöl in einem Bräter (mit Deckel) rundum ca. 3 bis 5 Minuten anbraten und dann bei Seite stellen.
3. Im gleichen Bräter Zwiebeln anbraten. Knoblauch zu geben und kurz mitbraten. Tomatenpüree zugeben und kurz andämpfen.
4. Bouillon und Rotwein zugeben und aufkochen. Das Fleisch hinzugeben und zugedeckt im Backofen bei 180 Grad circa 30 Minuten (1 cm Würfel) oder 1 Stunde 30 Minuten (3 cm Würfel) schmoren lassen
5. Bräter auf den Kochherd stellen, Rahm zugeben, aufkochen und ohne Deckel circa 15 Minuten bei kräftiger Hitze einkochen.
Dazu passt Kartoffelstock oder Teigwaren und Gemüse.
