Instructions

DEUTSCHES REZEPT NACH DER ENGLISCHEN FASSUNG
A piñata is a colourful, candy-filled object hung at celebrations and struck until it bursts and the sweets come tumbling out. This cake works on the same principle – simply slice it open, and the Smarties come pouring out. The surprise is guaranteed.

1. Preheat the oven to 180°C. Place 400 grams butter, softened in a bowl, add 400 grams sugar and 2 pinches of salt, and mix with the whisk attachment of a hand mixer. Add 8 eggs one at a time, continuing to mix until the batter is light and pale.

2. Mix 400 grams flour and 2 teaspoons baking powder together, then fold into the batter. Divide into prepared pans and bake both pans side by side in the lower half of the oven for about 50 minutes

3. Remove from the oven, let cool slightly, remove the pan edges, turn the sponges onto a wire rack, remove the baking paper, and let cool completely. Then Slice each sponge horizontally twice to get a total of 4 layers.

4. From 3 of the 4 sponge layers, cut out a circle of approx. 7 cm diameter in the centre. Place one layer with a hole on a cake board.

5. Mix 300 grams crème fraîche (filling) with 300 grams apricot jam. Spread the mixture over all sponge layers with holes. Stack the 3 layers with holes on top of each other. Fill the cavity with 260 grams chocolate lentils (Smarties), then place the remaining layer without holes on top.

6.  Mix 200 grams crème fraîche with 350 grams icing sugar. Pour the glaze over the cake and use a spoon to let it flow over the surface and down the sides. Grate the zest of 1 organic lemon (zest only) over the top, scatter 1 tablespoons nonpareilles (sprinkles) over the cake, and refrigerate for about 15 minutes to allow the glaze to set slightly.
DEUTSCHE FASSUNG
