The last hot summer days are coming to an end. The last tomatoes in the fridge are used up, because soon there are only autumn vegetables left. So we have one of the last summer recipes for this year. A particularly tasty and simple recipe.

Summer-Cheese-Tomato Pie

Ingredients

  • 400g Puff pastry
  • 80g Breadcrumbs
  • 500g Cherry Tomatoes
  • 200g soft Cheese of your choice or soft cheese leftovers
  • 10 Sprigs of fresh thyme
  • Season with Chilli flakes and Herb
  • Olive Oil

Instructions

  1. Roll out the puff pastry and prick well
  2. Cover the base completely with breadcrumbs
  3. Quarter the cherry tomatoes and place them on the dough
  4. Cut the soft cheese of your choice or add soft cheese leftovers,  into bite-sized pieces and add to the tomatoes
  5. Spread a few sprigs of fresh thyme all over
  6. Season well with chilli flakes and herb salt
  7. Sprinkle generously with olive oil
  8. Bake at 22-25 minutes, 220g air circulation
