Rösti – Baked grated potatoes, Swiss speciality

I almost always forget Rösti in spring and summer. As soon as the days get cooler and the first autumn leaves become visible on the trees, my desire for potatoes begins to grow and I bake a fine Rösti. I was absolutely thrilled by this variation of baking because it looks great on the plate.

Ingredients

  • 1kg floury potatoes
  • 2 whole eggs
  • ¼ teaspoon grated nutmeg
  • Salt and pepper
  • Butter

Instructions

  1. Grate the potatoes roughly with a potato rasp
  2. Add two whole eggs, ¼ teaspoon grated Nutmeg, Salt and Pepper.
  3. Mix everything well by hand.
  4. Place the filling in a well buttered muffin tray.
  5. Place a butter flake on each Rösti.
  6. Bake in the oven at 220 degrees Celsius citculating air for 40 minutes.
